Description

One of its many characteristics is that it's a deliquescent alkali and absorbs carbon dioxide and moisture from the air. Food grade sodium hydroxide is used in the chemical washing and peeling of fruits and vegetables, softening of firm substances and as a thickening agent.

Function

The dissolution of solid sodium hydroxide in water creates a highly exothermic reaction (creates a lot of heat). One of its many characteristics is that it's a deliquescent alkali and absorbs carbon dioxide and moisture from the air.
